If there is one food that I crave above all others, it is mussels. They can be prepared in a variety of ways, encompassing a broad range of flavors; from coconut curry Thai to classic French white wine garlic. There are mornings that I literally wake up and have a hankering for a steaming pot of mussels. Not cheerios….mussels.

Needless to say, if mussels are on the menu at a restaurant, I’m usually ordering them. And I have suffered dearly for this habitude, because lets face it, there are certain restaurants (i.e. Irish pubs) where you should NOT be ordering the shell fish. I know the bacon cheese burger is the safer bet, but I have no self-control and inevitably end up eating the mussels…..for better, for worse.

This weekend though, I had the opportunity to go to Flex Mussels, which is renowned in NYC for their fantastic pots of ornate and unique mussels…23 different types in all! You can imagine how difficult it was to choose only a couple to share with my friends and fellow diners, Sam & Sara. In fact, a third party observer would have thought this was one of the most difficult decisions of my life the way that I carefully weighed out each option, debating whether to go with the tried and true classics or branch out and go for the exotic.

Finally, after a quick pep talk with our server, we arrived at a game plan. We would order three different pots of mussels to share among the table along with some truffle fries. First we got an order of the Dijon Mussels made with dijon mustard, white wine, creme fraiche, and parsley ($19.50). These were by far my favorite of the three, and I made that known by locating the pot directly in front of me and my big fat fork. The broth was so good, I would consider it drinkable. The mustard brought forth a tangy and acidic flavor that was carefully balanced by the creaminess of the creme fraiche. And the chopped parsley was fresh and earthy.

Next we enjoyed the Fra Diavolo mussels made with San Marzano tomatoes, olive oil, fresh basil, crushed red pepper flakes, and garlic ($19.50). Sam insisted that we order this classic, and although I thought they were good, I probably would not order them when at Flex again. Instead, I would opt for a more complex broth when at the Mecca of mussels, and save the run-of-the-mill spicy red sauce for the amateurs. I will admit that the large chunks of crushed tomatoes were delightful on the fresh baked bread provided for dipping and dunking!

Lastly, we recieved our order of the South Pacific Mussels, which were made with kaffir lime, cilantro, white wine, and lemongrass. I tried persuading Sam and Sara to order the Thai mussels instead, which were very similar to the South Pacific in flavor, but with the added richness of curried coconut milk. Unfortunately though, it was two against one and we ended up going with the lighter broth. I wasn’t crazy about these because the broth was too almost too light. There was nothing sticking to the the meat of the mussel. I hoarded the remaining dijon mussels while my eating companions picked at their mistake.

Last but not least, I must review the truffle french fries which were served with a creamy aioli dipping sauce. They were really delicious and made a perfect accompaniment to dip in the mussel broth (especially the dijon….did I mention it was drinkable?).

I am looking forward to my next dinner at Flex and I will definitely be trying the Thai Mussels along with the Mediterranean which has shrimp, kalamata olives, fennel, lemon, anise, and oregano ($22.50)

Ohh and I almost forgot to mention the wine/cocktail selection, which is pretty reasonable for NY fine dining. My friends and I shared a bottle of the Vincent Dampt Chablis for only $54. The selection of wines was also fairly extensive, which is somewhat expected at a mussel-centric restaurant. I mean, what goes better with mussels than wine?!

…..besides crusty bread, of course!

Have you ever had the privilege of witnessing a child enter Disney World for the first time? You watch their face light up with joy, their little legs propelling them forward as quickly as possible, their eyes wide with excitement. Well add some intense hand gurning, and thats what I look like each time I enter Eataly Italian market. It is a Mecca for foodies–a specialty food market on steroids, with restaurants and cafes scattered throughout.

You can stand around high tables in the salumeria, enjoying a glass of wine expertly paired to compliment an assortment of specialty cheeses, or you can enjoy nibbling on  a freshly baked focaccia as you wait for your table at La Pizza & Pasta. And Lord knows you’ll have plenty of time to wash down several espressos at Cafe Vergnano, if you’re trying to get a table at the new rooftop birreria–the line to go up is longer than airport security at JFK. No, I’m not joking.

Sure, the market is expensive (and indeed touristy, as several other bloggers have observed), but it is undoubtedly worth the visit. Take it for what it is: an expensive dining experience in an avant-garde food theater. And on that note, I shall walk you through my Eataly experience this past weekend, beginning in the Salumeria with a nice glass of red wine (Italian, of course!).

After adapting to the circus like environment of Eataly, my friends and I gathered around a hightop table in the salumeria and ordered a platter sampling the selection of cured meats and cheeses. The cheese assortment included: a creamy ricotta, a strong parmigiano regiano, a pungent taleggio, a sweet gorgonzola, and a cacio de Roma. My personal favorites were the taleggio and the ricotta, which paired beautifully with the fresh fig and orange segments accompanying the plate. The meats we tried included: delicious mortadella cubes, 14-month aged prosciutto de Parma, and sweet & spicy coppa and sopressata. The prosciutto de parma was hands down the highlight of the plate–delicate and salty.

Next we headed over to La Pizza, where Neapolitan natives are firing up the kind of pizza that God would make if he were having dinner guests. And the gold-tiled ovens certainly add to the ethereal effect:

I decided to go all out and order the most expensive pizza on the menu, which would be the Fru Fru Pizza coming in at a total cost of $22 (a price that you can somehow justify after the first bite!). For indecisive people, like myself, who can’t chose just one pizza on the menu, the Fru Fru offers a small sampling of three different topping combinations: (1) dollops of sweet ricotta cheese with cooked ham (no sauce); (2) aged mozzarella cheese with tomato sauce; and (3) delicious Parma ham with arugula and parmigiano reggiano shavings. It looks like this:

My favorite of the three, you ask? Probably the ricotta and ham because of the contrasting salty and sweet flavors (but the pizza crust is really the star of this dish!).

Two of my friends ordered the Quattro Formaggi with a mixture of gorgonzola, pecorino romano, mozzarella, and parmigiano reggiano cheeses. This is supposed to be served as a white pizza, but one of my friends also ordered it with tomato sauce and it was none-the-less delicious. You can feast your eyes on the white one:

And then of course someone at the table had to be a plain Jane and order the classic Margarita Pizza with tomato sauce, slices of fresh mozzarella, basil, and a drizzling of extra virgin olive oil. I know there is something to be appreciated about the flavor of a few quality ingredients, but I like to live a little with my pizza toppings!! Like everything else at Le Pizza and Pasta though, it was amazing!

Most people would be throwing in the napkin by now, but not me! Sufficiently pregammed with my pizza appetizer, I decided to order a plate of Tagliatelli al Ragu di Manzo, which is a hearty (and rich) braised short rib ragu over homemade pasta. The pasta is cooked to perfection–just tough enough to stick to your tooth a little (the definition of Al dente). And the braised meat is so tender that it falls apart at the mere prodding of your fork. The dish is quite heavy given the nature of the sauce and the weight of the pasta, but it is every bit savory and delicious. I would highly recommend this pasta (as long as  you have already tried the pizza!).

{ Brushetta with Prosciutto, Ricotta, Apples, & Olives }

Before almost every meal at my house, I find that there are a few moments where everyone gathers around the kitchen center island, anxiously waiting for dinner to finish cooking. The table has already been set, but the meat may need to rest another minute before carving, or the sauce may have to reduce a bit more before serving. It is during this time that I like to “pre-game” for dinner (confessions of a fat girl) with an appetizer–and bruschetta is always at the top of my list! I steal a few slices of baguette from the bread basket, toast ’em in the oven or on the grill, and then top them off with any and every thing that I can find in the fridge.

This week, my little sister Ella, turned me onto a new layering of ingredients and flavors, which included; sliced granny smith apples, creamy ricotta cheese, chopped kalamata olives, and thinly sliced prosciutto.  Not going to lie, I had some reservations about these particular food combinations at first, but I was very pleasantly surprised by the sweet and salty contrast of the prosciutto and ricotta. The slightly tart bite of apple also added another unexpected dimension to the plate, and was a refreshing palate cleanser in-between toasts.

If I were to serve this at a party (which I certainly will in the future!), I would allow the guests to create their own toasts by serving the ingredients separately, this way everyone can have exactly the toppings they want. The dish is so simple and relatively inexpensive (cost of ingredients averaging $10 for 6 servings), but it very important that you use quality ingredients–high grade (or homemade) ricotta is a  MUST! (I suggest Wegman’s brand for $3.00). I also suggest that you season the ricotta with a nice drizzle of extra virgin olive oil and a sprinkling of salt and pepper before serving it…it adds more umph–and looks pretty!

{ Ingredients }

  • 1 baguette, sliced on diagonal, 1″ thickness
  • 2 cups high quality (or homemade) ricotta cheese
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and freshly ground pepper to taste
  • 1 cup kalamata olives, pitted and chopped
  • 2 granny smith apples, thinly sliced
  • 4-6 ounces of thinly sliced prosciutto

{ To Make the Bruschetta Toasts } Use a silicon brush to coat the sliced baguettes with extra virgin olive oil. Place them on the grill, turning until well toasted on each side (about 3 minutes per side). NOTE: You can also toast the bread in an oven pre-heated to 350 degrees, which takes about 5 minutes.

Everyone knows that New York is host to wealth of fantastic Italian restaurants–Marea, Babbo, Del Posto, Scalini Fedeli, Patsy’s, Carmine’s (just to name a few)–but outside of the city, off of route 1, lies a “hidden gem” by the name of Tratattoria Toscana. I use quotes because although it has a very inconspicuous location, it is well known among foodies, locals, and Italian’s looking for a proper pasta with gravy. This place is always jam packed and the delicious food being served is worthy of such loyal patronage.

Rodolfo Monti and his son, Giacomo (with names as authentic as their food), are the owner and chef of Trattoria Toscana, and although their menu offers a variety of well-loved Italian classics, their culinary speciality is certainly from the Tuscan region.

To start, I suggest the Sliced Pears, Prosciutto, and Shaved Parmesan Cheese ($13) or my personal favorite, Mussels cooked in Spicy Tomato Broth with White Wine and Garlic ($11). Another great way to sample the menu is to split a pasta dish or two between the table as an appetizer. The Amatriciana cooked with pancetta, onion, tomato, and pecorino cheese is very flavorful red sauce with a delicious hearty bacon flavor.

For my main dish I ordered the Braised Short Ribs in a Chianti Wine Reduction, served with Parmesan Risotto and Garlicky Broccoli Rabe. As if all of these plate components aren’t already my favorite things to eat, they were also cooked to PERFECTION! The meat just seemed to fall apart each time I poked it with the fork, and the risotto was a perfect creamy compliment to the flavors of the Chianti wine reduction. The pair was like an upscale, Italian version of mashed potatoes and gravy. And the broccoli rabe, which can be a hit or a miss for many restaurants, was out of this world good. The garlic seasoning was just right and it was cooked without being too mushy. This dish certainly makes my list of Top 10 Food-gasm experiences.

My mom ordered the Tilapia Livornese topped with capers, black olives, caramelized onion, and tomatoes and served with oven-roasted potatoes. Stealing a small forkful from her was a challenge, thats how much she enjoyed it. The fish was light and buttery and the sauce was incredible.

My dad, on the other hand, opted for something a little bit richer–the Lollipop Lamb Chops in an aged balsamic reduction, served with risotto and roasted potatoes (see photograph at top). As you can see in the photograph, the lamb is cooked to perfection with a bright pink hue in the center of the meat. The balsamic reduction had a nice flavor but thankfully was used sparingly, so as not to take away from the quality taste of the meat. And the potatoes–although just a side component on the plate–were also very nicely done with a crispy outer shell and piping hot center.

After finishing with our main courses, we ordered a round of cappuccinos and a large piece of Homemade Ricotta Cheesecake to share as a table. The coffee was nothing special but the cheesecake was very delicious. It was not too dense or too sweet, and the fresh berries and whipped cream around the edges of the plate were great addition to each bite. A perfect way to end a fabulous meal!

{ Eggplant Parmesan }

 

You know those “learn-to-love it” foods? The strange vegetables and odd aquatic animals that you refuse to eat throughout your childhood but eventually develop a tolerance and than passion for as you get older. I think it is safe to say that eggplant is one of these foods–along with brussel sprouts, olives, shell fish, and stinky cheeses (just to name a few!). And the way most come to love this waxy, purple sponge of a vegetable is through eggplant parmesan–people will give almost anything a chance if it is breaded, fried, and/or covered in cheese. And most likely, they will enjoy it!

If you have tried eggplant parmesan before and the texture still bothers you, do not stop reading and dismiss this recipe. I too have had some bad eggplant parm experiences, but I promise this one might just convert you. Oftentimes, I find that restaurants don’t slice the eggplant thin enough because they want to minimize the preparation and frying time. This shortcut compromises the entire dish, still leaving you with that mysterious itching sensation on the roof of your mouth. But my recipe calls for a very thin slices, which mask the spongy texture under breaded, salty, cheesy goodness!

I fry up an eggplant or two in the beginning of the week, leaving the disks in the fridge for a light snack or as an ingredient for a more complex meal (i.e. eggplant parm lasagna or sandwiches). Of course, I also use them for this easy eggplant parmesan dish!! Enjoy the recipe and give eggplant a chance!

{ Ingredients for Fried Eggplant }

  • 1-2 large, ripened eggplants (sliced about 1/4″ thick)
  • 3 cups all purpose flour
  • 4 cups of Panko Bread Crumbs
  • 1/4 cup of grated parmesan cheese
  • 1/4 cup of grated pecorino romano cheese
  • 3 large eggs, beaten with 2 tablespoons of milk
  • Vegetable oil for frying
  • Kosher Salt

{ To Make Fried Eggplant } Set up three bowls; one with the flour, one with the beaten eggs, and one with the breadcrumbs combined with the parmigiano reggiano cheeses.

Run the sliced eggplant disks through a standard breading proceduredredge in the flour (shaking off the excess), then through the egg wash, and then through the breadcrumbs.
Pour the vegetable oil into a large skillet until it reaches a 3/4″ thickness. Heat the the oil over a medium high flame until it is good and hot (test by flicking in pieces of breadcrumbs–they should sizzle, but not burn!). Fry the eggplant in batches for about 2-3 minutes on each side, or until it appears golden brown.

Remove the eggplant from the pan and sprinkle with kosher salt. Allow eggplant to cool on a bed of lettuce leaves or paper towels (although the lettuce absorbs the grease much better!).

{ Ingredients for Simple Sauce } 

  • 1/4 cup extra-virgin olive oil
  • 1 (28 ounce) can of whole San Marzano tomatoes, drained and chopped
  • 2 whole garlic cloves, minced
  • 1/2 yellow onion, chopped
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup fresh basil, finely chopped

{ To Make Simple Sauce } Heat the olive oil in a large saucepan over medium flame. Sautee the onion for about 3 minutes, then add the garlic and continue to cook for another minute or two (do not burn the garlic). Add the salt, pepper, parsley, and tomatoes.

NOTE: If you like your tomato sauce spicy, then add some crushed red pepper flakes at this time! Cook for 10 minutes.

{ To Assemble the Eggplant Parmesan } Preheat the over to 350 degrees.

Arrange the eggplant on a baking sheet, one layer thick. Spoon some of the simple tomato sauce onto the tops and then add a 1″ cube of fresh (or aged) mozzarella cheese on top of that.

Bake for 18-10 minutes, or until the cheese becomes bubbly and golden. Sprinkle with freshly grated parmesan cheese and serve!

{ Chicken Milanesa }

Based on my observations here in Buenos Aires, there are five staple dishes in the Argentine diet: steak, pizza, pasta, empanadas, and milanesas (they will also consume dulce de leche in any, and every, form possible!). But milanesas are just about as popular in Argentina as hamburgers are in America. Likewise, they are decorated with many different toppings and condiments and served in numerous forms. Originally an Italian creation, Milanesa is a thin slice of meat—veal, chicken, or beef—that is breaded and fried to a golden perfection. Argentines, however, have taken their creative liberties with this simple dish and used it as a blank canvas to invent unfathomable and uncountable flavor combinations. There are even entire restaurants dedicated to the art of milanesas (i.e. Club de Milanesa). Toppings range from four cheeses, to sundried tomatoes and basil, to fried eggs and pancetta. Here is a look to get you inspired:

This is my simple recipe for chicken milanesa, although you can do it with any meat and top it with any ingredients that you like! I prefer mine simple like the Italians, with a little bit of fresh squeezed lemon juice and a nice side salad.

{ My Tips for Cooking the Milanesa }

  • Really pound out the chicken so that it is thin and tender.
  • Use panko breadcrumbs if you can, they seem to brown nicer.
  • Bread the chicken one-hour before frying it, allowing it to chill in the refrigerator in the meantime. I find that this helps the breading adhere to the meat, so it doesn’t fall apart when you are turning it.
  • Make sure the oil is hot enough before you start to fry. I test the temperature of my oil by throwing in bits of breadcrumbs, and checking that they sizzle upon submersion. Also, make sure that the oil is not too hot or the breading will burn and the meat won’t cook. You should heat the oil over a medium-high flame, not high.
  • When you remove the fried chicken from the oil, place it on a bed of lettuce leaves, which absorb the oil better than paper towels and brown paper bags!

 { Ingredients }

  • 1 cup all-pupose flour
  • 2 eggs, beaten with a splash of milk
  • 1 ½ cups panko breadcrumbs
  • ½ cup freshly grated parmigiano reggiano cheese
  • 1 ½ pounds chicken breast, pounded to ¼” thickness
  • Kosher salt
  • Freshly ground black pepper
  • Vegetable oil for frying (Extra Virgin Olive Oil, if it’s in your budget!)

 { To Make the Milanesa }

Set up three bowls; one with the flour, one with the beaten eggs, and one with the breadcrumbs combined with the parmigiano reggiano cheese. Season the chicken breasts with a little kosher salt and black pepper and then take each piece of chicken through a standard breading procedure: dredge in the flour (shaking off the excess), then through the egg wash, and then through the breadcrumbs.

Make sure that the chicken is well breaded!! Lay the breaded chicken on a baking sheet and allow to sit in the refrigerator for a hour or so.

Pour the oil into a large sautee pan until it reaches a thickness of about half an inch (remember, you want it to cover the chicken). Then heat the oil over a medium-high flame. Once the oil is hot, cook the chicken in batches for 4 to 5 minutes on each side, or until golden brown and crispy!

When the chicken is removed from the pan, lay it on a bed of lettuce leaves to absorb the oil and sprinkle with a bit of kosher salt.

Serve with fresh lemon wedges or go the Argentina route and top it with whatever your heart desires!
